
The Raven Bistro’s Crunchy Granola pairs great with yogurt or chia pudding with fruit, on a smoothie bowl, as a baked fruit dessert topping or a snack by itself.
Ingredients:
- ¼ cup coconut oil
- ½ cup maple syrup
- ¼ cup brown sugar
- 1 tbsp vanilla
- Pinch of salt
- 2 tsp pumpkin pie spice (or 1.5 cinnamon, .5 nutmeg & dash of allspice)
- 500 grams Gluten Free Oats
- 1 cup shredded coconut
- 1 cup sliced almonds
- ½ cup pecan pieces
- 1 cup puffed rice
Method:
- Preheat oven to 350 degrees.
- Combine coconut oil, maple syrup, brown sugar, vanilla, salt and pumpkin pie spice in a pot over a medium heat until melted.
- Combine wet and dry ingredients and spread onto a baking sheet.
- Bake for 20 mins.
- Do not stir, rotate pan and bake for an additional 8-10 mins or until golden and toasted.
- Allow to cool before breaking into chunks.
- Store in an airtight container for up to three weeks.
