Recipe: The Raven Bistro's Crunchy Granola

The Raven Bistro’s Crunchy Granola pairs great with yogurt or chia pudding with fruit, on a smoothie bowl, as a baked fruit dessert topping or a snack by itself.

Ingredients:

  • ¼ cup coconut oil
  • ½ cup maple syrup
  • ¼ cup brown sugar
  • 1 tbsp vanilla
  • Pinch of salt
  • 2 tsp pumpkin pie spice (or 1.5 cinnamon, .5 nutmeg & dash of allspice)
  • 500 grams Gluten Free Oats
  • 1 cup shredded coconut
  • 1 cup sliced almonds
  • ½ cup pecan pieces
  • 1 cup puffed rice

Method:

  1. Preheat oven to 350 degrees.
  2. Combine coconut oil, maple syrup, brown sugar, vanilla, salt and pumpkin pie spice in a pot over a medium heat until melted.
  3. Combine wet and dry ingredients and spread onto a baking sheet. 
  4. Bake for 20 mins. 
  5. Do not stir, rotate pan and bake for an additional 8-10 mins or until golden and toasted.
  6. Allow to cool before breaking into chunks. 
  7. Store in an airtight container for up to three weeks.
